This recipe is by Yukti. Here is what she has to say about it! Being quarantined in my in-laws house in Jaipur since the lockdown, I did not have any extraordinary ingredients in my hand. With the lockdown and the summer heat trickling in, I wanted something to satisfy my craving for a cold dessert. Making some easy ice cream was the way to go.

Since getting whipping cream and condensed milk was out of the question, I dug deep and came across an easy ice cream recipe requiring very basic ingredients. The first time I tested it was with Parle G biscuits and cocoa powder, so the second time I altered the measurements and instead used Hide and Seek and Parle G biscuits with cocoa. That is how I got a thick chocolate ice cream.

You can use any plain biscuits like Parle G or Marie as a base recipe and add in flavours or use chocolate flavoured biscuits to create a chocolate base.

Easy Ice Cream

Ingredients:

Biscuits (any) - 18 - 20

Sugar - 1.5 tablespoons

Cold milk - 3/4 cup

Malai / fresh cream - 1/2 cup

Cocoa powder - 1.5 tbsp

Nuts/chocolate chips/other additions (optional)

Method:

1. Take the biscuits and sugar and grind them together.

2. Add cold milk, cocoa powder and malai and mix in everything together again in the mixer grinder.

3. Pour it in a mould or any cup or container. Add nuts or chocolate chips and set it in the freezer until thick and scoopable. That is all! This is a very easy recipe to make yet very enjoyable.
