Recipe: Whole-wheat Carrot Cake with Cream Cheese Frosting

The cake is a whole- wheat (maida free) carrot cake which uses strawberries, blueberries and black raisins. The fruits, especially the berries, are seasonal and hard to find fresh. Sometimes the fresh variety is more expensive than buying frozen. In this case, you can substitute it for the frozen kind. The quality of the finished product will not vary in this case. The frosting is made of cream cheese, but includes a bit of whipped cream in it too. The final recipe will yield a 1 kg cake.

Ingredients:

* Whole Wheat Flour 3/4 cup * Castor Sugar 1/2 cup * Grated Carrot 2 cups * Eggs 3, medium size * Cinnamon powder 1/2 tsp * Salt 1/4th tsp * Baking Powder 1/4 tsp * Baking Soda 1/2 tsp * Oil 2 tbsp * Vanilla essence 1 tsp * Strawberries, Blueberries, Black raisins - as required * Homemade chocolate for decorating - as required

Ingredients for the frosting:

* Mascarpone cream cheese 200 gms * Powdered sugar 2 tsp * Vanilla essence 1tsp * Whipped cream 1 cup

Procedure:

1. Preheat your oven to 180°C and grease the baking pans. Depending on the height and diameter of the cake that you wish to bake, use appropriate baking pans. Fill the pans only up to 1/4 of the way with batter. 2. In a large bowl. sift in the whole wheat flour, cinnamon, salt, baking powder, baking soda and keep this aside. 3. Mix a touch of flour with the raisins and keep this aside. 4. In a separate bowl, add the eggs and sugar. Beat this well until it is mixed together completely. Then, add vanilla essence and beat again to combine well. 5. Add grated carrot, the sifted dry ingredients, oil, and raisins and combine well with a spatula. 6. Bake this for 40 minutes or until done. 7. Let the cake cool completely before decorating.

Frosting:

1. Add powdered sugar to the mascarpone cream cheese and mix. Also, add vanilla essence and mix well. 2. Now, add whipped cream to this mixture and beat well until it is well blended. Decorating: 1. Cut the cake into layers (as you wish) and add the cream cheese frosting in between the layers. 2. Place the strawberries, blueberries, and raisins. Since this cake is moist as it is, there is no need to add sugar syrup in between the layers. 3. For the exterior, coat the cake thinly with minimal frosting to give it a rustic or imperfect look. This is the same way to get the naked layers look. 4. For finishing touches, you can use fresh flowers, chocolates and even whole strawberries on the top of the cake. This is as per your requirement.
