Nankhatai is an Indian cookie, which brings back many childhood memories. It is essentially a shortbread type cookie which is very popular in North India. It is usually made with a few types of flours, making it very nutritious as well as tasty. This can also be enjoyed with toppings such as dry fruits and almonds, among other rich toppings. This recipe for nankhatai is by Rupali, hope you enjoy it!

Nankhatai

Ingredients:

Whole Wheat flour - 1/2 cup

All purpose flour - 1/2 cup

Besan - 1/3 cup

Rava/suji - 1 Tbsp

Baking powder - 1 Tsp

Salt - a pinch

Cardamom powder - 1 tsp

Powdered sugar - 3/4 cup

Ghee - 1/2 cup

Method:

1. To make the flour mixture, mix all flour and dry ingredients (the first seven ingredients) in a bowl. Pass it through a sieve until smooth and keep it aside.

2. Mix ghee and powdered sugar in a separate bowl and whisk well.

3. Add the flour mixture to the ghee and sugar mixture and fold to make a smooth dough.

4. Make flat balls like a peda or in a shape of your choice. Bake it in a preheated oven at 180 degree C for 20 minutes or until golden brown. Cool completely and serve.
